To make the topping, in a food processor work bowl, mix the brown sugar, flour, 1/4 teaspoon almond flavoring, and salt. Cut in the butter until the mixture is mealy, Add the oatmeal and almonds. Process briefly until the almonds are coarsely chopped. In a 10-inch glass pie pan, mix the granulated sugar, peaches, and the remaining 1/4 teaspoon almond flavoring. Press the fruit down into an even layer. Sprinkle the topping over all, and press that into a layer.
