Peach-Almond Crisp
This is so easy, you can decide to make it just before dinner--and have it ready for dessert.

1/​3 cup brown sugar
1/​3 cup all-purpose flour
1/​2 teaspoon natural almond flavoring, divided
pinch of salt
3 tablespoons unsalted butter
1/​3 cup quick-cooking oatmeal
1/​2 cup slivered blanched almonds
1/​3 cup granulated sugar
6 ripe peaches (or nectarines) peeled and sliced

Preheat the oven to 375 degrees F.

To make the topping, in a food processor work bowl, mix the brown sugar, flour, 1/​4 teaspoon almond flavoring, and salt. Cut in the butter until the mixture is mealy, Add the oatmeal and almonds. Process briefly until the almonds are coarsely chopped.

In a 10-inch glass pie pan, mix the granulated sugar, peaches, and the remaining 1/​4 teaspoon almond flavoring. Press the fruit down into an even layer. Sprinkle the topping over all, and press that into a layer.

Bake in the middle of the oven for 30 minutes, or until the fruit is tender and the topping is nicely browned. Serve warm from the pan.
